To level your riding and bow quickly, go absolute full speed, circling counter clockwise around the enemy and firing potshots into them. The fast you go when you attack, the more riding experience you get and the more difficult the shot, the more bow experience you get. It's okay not to kill everything yourself.
I thought my timing was off but now I know its related to weapon positioning (left - chambers overhead or right), I'll definitely give this a go.
